The Right Way to Process Acai Berries

By Orson Dunham

Most people like to eat their fruits fresh but it may not be an option when it comes to acai berries. While most fruits last days or even weeks, acai berries only last a very short while. The acai berry deteriorates fast after picking than any other fruit on record. In fact, acai juice can only last up to 24 hours in a refrigerator before it's many nutrients start to dwindle.

Since acai berries do not last long at all, it is hard to transport them anywhere far. That means, something needs to be done to the acai berries before they can be transported to be sold elsewhere other than near the rain forest regions in Brazil or wherever else the acai palm trees grow.

If manufacturers and exporters of acai berries do not have a solid process to preserve the berries, they will be easily spoiled and be worth nothing to end buyers. Once the acai berries are picked, there is only a small window of opportunity to preserve them before there is a risk of bacterial contamination.

The method used to preserve and process acai berries must also be one that preserve the most nutrients found in the berries. If the nutrients are destroyed in the process, no one would feel the need to pay a lot of money, risking microbial contamination and going above and beyond to obtain this hard to obtain exotic fruit. It is much easier to buy other fruits in local grocery stores.

Some companies freeze the acai berries before they are transported. However, this is also challenging because the second the temperature fluctuates, there is a risk that the acai berries will be spoiled immediately. Manufacturers have to spend more money to ensure that the shipping environment is constant. This makes shipping frozen acai berries rather expensive.

Some companies do not want to mess with fresh acai berries or even frozen ones and they opt to compact the acai berries into capsules, tablets, pills and powder. There are many forms of the acai berry that will last long but they usually do not contain as much nutrients as fresh or frozen acai berries. Some of them are not even good for you anymore.

Then there is the famous freeze drying process for acai berries which is done in a vacuum. Some companies and researchers claim that the freeze drying process is the best way to preserve the nutrients in the acai berry. In a vacuum, the enzymes that cause the acai berry to deteriorate fast are much less active.

Since there are many ways to preserve and process acai berries, you need to look at the product that you are considering in order to see what process was used. Some processes will destroy all the nutrients that you care about and you will not benefit from consuming that product at all. - 17273
